Our goal is to craft an easy, comforting, healthy, and flavorful pork soup recipe. Where you can also turn it into a light satisfying meal.

We designed this Instant Pot Pork Rib Soup recipe with a fusion of ingredients. A creative combination of traditional and non-traditional Chinese or Asian ingredients that creates a unique flavor profile.

Enjoy this tasty nourishing soup with tender juicy pork ribs, fresh crunch zucchini, tender sweet carrots and leeks, juicy umami mushrooms, and smooth al dente noodles.

How to Make Instant Pot Pork Rib Soup

Here are the ingredients for cooking Pork Rib Soup in Instant Pot:

Pork. We developed this Instant Pot Pork Rib Soup recipe with baby back ribs. For a cheaper alternative, you can use 3 pounds of pork neck bones.

Noodles. Use your choice of thin or thick noodles to make this Chinese Pork Noodle Soup. Such as Knife-cut noodles (刀削麵), Lamian (拉麵), Thick noodles (粗麵), Ho fun (河粉), Rice vermicelli (米粉), Rice noodles (米線), Lai fun (瀨粉), or Egg noodles (油麵).

Regular Soy Sauce. Lee Kum Kee Soy Sauce (生抽) is one of our favorite go-to soy sauces.

Fish Sauce. Don’t worry! Fish Sauce won’t make the Chinese pork rib soup taste fishy! It’s extremely umami-filled, thus enhancing and elevating the soup’s flavors. From our blind taste test, Red Boat 40N fish sauce is our favorite. Three Crabs Brand Fish Sauce is a popular alternative.

Fennel Seeds. Fennel seeds pair very well with pork.

Leek. Prepare by peeling off the outer layers of the leek, then rinse the leek under cold tap water to remove any dirt.

Sauté Ginger, Green Onion, & Garlic

Heat up Instant Pot using “Sauté More” function. Wait until Instant Pot says “HOT” (roughly 8 minutes).

Add 1 to 2 teaspoons (5ml – 10ml) vegetable oil in Instant Pot. Make sure to coat the oil well over the whole bottom of the pot.

Add 2 ginger slices, crushed garlic cloves, and fennel seeds in Instant Pot, then saute for 2 minutes.

Step 2

Deglaze Instant Pot

Pour 1 cup (250ml) cold water into the Instant Pot. Then deglaze by scrubbing all the flavorful brown bits (if there are any) off the bottom of the pot with a wooden spoon. Give it a quick mix.

Step 3

Pressure Cook Pork Rib Soup

Add 1 teaspoon (7g) fine table salt, 1 tablespoon (15ml) regular soy sauce, 1 tablespoon (15ml) fish sauce, and 2 bay leaves to the Instant Pot. Give it a quick mix.

Add baby back ribs in Instant Pot as shown above.

Add dried shiitake mushrooms, leeks, and 5 cups (1.25L) cold water to the Instant Pot. Make sure the Leeks are fully submerged in the cooking liquid.

Layer carrot chunks on top.

With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.

Instant Pot Pork Rib Soup Cook Time: Pressure Cook pork rib soup at High Pressure for 20 minutes, then Natural Release for 20 minutes.

After 20 minutes of natural release, release the remaining pressure by turning Venting Knob to Venting Position.

When the Floating Valve drops, open the lid carefully.

Step 4

Optional – Cook Noodles

When Instant Pot’s pressure cooking cycle ends and switches to the natural release stage, boil 1.5L cold water and 1 teaspoon salt on the stovetop. You can also add 1 teaspoon oil to the water to prevent the noodles from sticking together.

Once the water starts boiling, cook noodles according to your preferences. Then drain and set them aside.

For Reference – Thin Egg Noodles Cooking Time: For our thin egg noodles, it took 4 minutes to cook to our desired texture.
Step 5

Cook Zucchini and Cut Ribs

Transfer pork ribs to a large mixing bowl or tray. Be careful because the pork ribs will be quite soft and fall-off-the-bone tender.

Remove the leeks and ginger slices.

Set aside the carrot chunks and shiitake mushrooms.

Then, strain all the spices from the Instant Pot pork rib soup with a meshed strainer.

Let the ribs cool down a little and cut them into serving sizes.

Cut the shiitake mushrooms into halves as well.

If you like, you can use a Fat separator to remove some of the fat from the Chinese pork rib soup.

Bring the pork rib soup back to a boil with “Saute High” function.

Amy + Jacky’s Tip: If you have a glass lid, cover the Instant Pot with the glass lid to speed up this step.

Add zucchini to the Instant Pot, then cook until desired texture. It’ll take roughly 5 to 7 minutes depending on your desired texture.

Step 6

Season & Serve Chinese Pork Noodle Soup

Taste and season the Instant Pot pork rib soup with a few pinches of kosher salt. For reference, we added 1 extra pinch of kosher salt at the end.

Assemble the bowl by placing the cooked noodles, zucchini, carrot chunks, shiitake mushrooms, and pork ribs in large serving bowls.

Pour in the hot and tasty broth, then garnish the pork noodle soup with finely sliced green onions (optional). 

You can also serve it as a Chinese pork rib soup with no noodles.

Ingredients

  • 2 pounds (918g) baby back ribs
  • 1 - 2 teaspoons (5ml - 10ml) vegetable oil
  • 2 slices (3.5g) ginger
  • 6 (27g) garlic cloves , crushed
  • 1 teaspoon (2g) fennel seeds
  • cups (1625ml) cold water
  • 1 teaspoon (7g) fine table salt
  • 1 tablespoon (15ml) regular soy sauce
  • 1 tablespoon (15ml) fish sauce
  • 2 (0.5g) bay leaves
  • 2 (10g) dried shiitake mushrooms , rinsed
  • 1 (200g) large leek , cleaned & cut in half
  • 1 (345g) large carrot , chopped into 1-inch chunks
  • 1 (447g) zucchini , chopped into ½-inch chunks

Optional Noodles

  • Cooked noodles i.e. Knife-cut noodles, rice noodles, or your favorite noodles (70g - 100g per person)

Optional Garnish

  • 1 stalk green onion , finely sliced

Instructions 

  • Sauté Ginger, Green Onion, Garlic: Heat up Instant Pot using “Sauté More” function. Wait until Instant Pot says “HOT” (~8 mins).

  • Deglaze Instant Pot: Pour 1 cup (250ml) cold water in Instant Pot. Then deglaze by scrubbing all the flavorful brown bits (if any) off the bottom of the pot with a wooden spoon. Give it a quick mix.
  • Pressure Cook Pork Ribs Soup: Add in 1 tsp (7g) fine table salt, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) fish sauce, and 2 bay leaves. Give it a quick mix.
    Add in baby back ribs as shown in photo.
    Add in dried shiitake mushrooms, leeks, and 5 cups (1.25L) cold water. Make sure the leeks are fully submerged in the cooking liquid. Layer carrot chunks on top.
    With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure for 20 minutes, then Natural Release for 20 minutes. Open the lid carefully.
