Ingredients

  • 4 (262g) large eggs
  • 3 strips (101g) bacon , bits size
  • ¼ cup (60g) cottage cheese
  • ¼ teaspoon fine salt
  • ¼ teaspoon (1.25ml) regular soy sauce
  • teaspoon freshly ground black pepper
  • ¼ cup (48g) freshly grated cheddar cheese
  • ¼ cup (48g) freshly grated mozzarella
  • 1 stalk green onion , thinly sliced

Instructions

  • Optional Flavor Boosting Step - Brown Bacon: This optional step will add some depth of caramelized smoky aroma & flavor to the egg bites. You can either brown the bacon in Instant Pot or in the oven.
    Oven Method:
    -Place bacon on a baking sheet lined with parchment paper.
    -Place baking sheet on the middle rack of a preheated 400°F oven.
    -Bake bacon until crispy and golden-brown. Set a timer for roughly 18 - 20 minutes.
    Instant Pot Method:
    -Add bacon in Instant Pot, then heat up Instant Pot using "Sauté More" function (no need to add oil as bacon has a lot of fat).
    -Allow the bacon to crisp and brown on both sides (~7 - 9 mins).
    -Remove bacon from Instant Pot, then place them on a paper towel to absorb the excess fat.
  • Prepare Egg Bites Mixture: While the bacon is browning in Instant Pot, break 4 large eggs into a large measuring cup. Mix and combine with ¼ tsp fine salt. Add ⅛ tsp ground black pepper, ¼ tsp (1.25ml) regular soy sauce, ¼ cup (60g) cottage cheese, ¼ cup (48g) freshly grated cheddar cheese, and ¼ cup (48g) freshly grated mozzarella to the egg mixture. Mix well.
    *Pro Tip: If you like more smooth, custard-like textured egg bites, use an immersion blender to blend the egg bites mixture.
  • Add Browned Bacon and Green Onions: Your bacon should be browned at this point. Absorb the excess fat and roughly chop them into bacon bits. Clean and dry the Instant Pot inner pot. Add bacon bits and green onions to the egg mixture, then mix until just combined.
  • Pressure Cook Egg Bites: Pour egg mixture into the silicone egg bites molds. Lightly wrap & cover the top of the egg bites mold with aluminum foil. Add 1 cup (250ml) cold water in Instant Pot. Place trivet with egg bites mold in Instant Pot.
    Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 9 minutes + 6 minutes Natural Release. After 6 minutes, release the remaining pressure by turning the Venting Knob to Venting position. Carefully open the lid.
  • Check Doneness & Serve: Unwrap the egg bite molds. Let the egg bites cool a bit, then pop them out. Garnish with thinly sliced green onions and freshly grated cheese. Serve these yummy egg bites & enjoy~ 🙂

Recipe Notes:

Double the Recipe: You can make a double batch by layering one silicone egg bite mold over another silicone mold. Just double all the ingredients.
Aluminum Foil: Wrapping the egg bites mold with foil keeps the water condensation from dropping onto the egg bites in Instant Pot.
Egg Bites Not Fully Cooked: If the egg bites are still somewhat wet (not fully cooked) after pressure cooking, place them back in the Instant Pot immediately, then close the lid to stream for another few minutes.

1. Smoky Flavor & Aroma Boost

We used Smoked Cheddar Cheese and Smoked Bacon for an extra dimension of smoky aroma & flavor.

2. Mix and Match Ingredients

You can mix and match the mix-in ingredients (meats, veggies) according to your preferences or what you have in the fridge – i.e. ham, spinach, bell peppers…etc to create your own “Starbucks sous vide egg bites”.

If you’re on a certain diet, you can use less cheese. Simply adjust according to your personal preferences. 🙂

Optional Flavor Boosting Step – Brown Bacon


*Note: This is an optional step. You can brown the bacon while you prepare other ingredients. It will add extra caramelized smoky aroma & flavor to the pressure cooker egg bites.

Add Browned Bacon and Green Onions


Your bacon should be browned at this point. Absorb the excess fat and roughly chop them into bacon bits.

Clean and dry the Instant Pot inner pot.

Add bacon bits and green onions to the egg mixture, then mix until just combined.

Pressure Cook Egg Bites


*Pro Tip: If you are on a healthy diet, you don’t have to coat the silicone egg bites mold with oil or cooking spray because the pressure cooker egg bites will pop out quite easily.

Pour egg mixture into the silicone egg bites molds.

Lightly wrap & cover the top of the egg bites mold with aluminium foil.

*Note: The aluminum foil keeps the water condensation from dropping onto the egg bites in Instant Pot.

Add 1 cup (250ml) cold water in Instant Pot Pressure Cooker.

Place trivet with the egg bites mold in Instant Pot.

Close lid, then turn Venting Knob to Sealing position.

  • Pressure Cooking Method: Pressure Cook at High Pressure for 9 minutes + 6 minutes Natural Release

After 6 minutes, release the remaining pressure by turning the Venting Knob to Venting position.

Check Doneness & Serve


Unwrap the egg bite molds. They should look like the photo below.

How noticeable is the cottage cheese in this recipe? I really despise the texture, so I’m not sure how much it retains in this recipe. Is it something that could be replaced by Greek yogurt if it is obviously noticeable, or is it more there to keep the egg light and creamy?

I made egg bites in the original IP-brand silicone egg molds (which come with a silicone lid so no need to wrap in foil). Even though I oiled the mold with olive oil before pouring in the eggs they do not ‘pop out’ when finished. I ran a knife around the edges and let them sit for just a few minutes before trying to remove but they were stuck to the mold (especially on the bottoms) and cleaning the mold was extremely difficult and time consuming. Good idea. I haven’t tried that but will next time. However they stuck not only to the bottoms but also sides. Could the molds themselves be the problem? The molds I used have what I would describe as a matte finish, whereas my silicone muffin tins are shiny and slick and I haven’t had problems with them when baking. I purchased IP’s own brand of egg molds to supposedly get the best available. Are the other egg bite molds that people use in their IP matte finish or are they shiny? Oh wow! I’d give this recipe ten stars if I could! The egg bites came out soft, tender, and cheesy. The flavor was delicious with the combination of bacon and onions. Most definitely better than what I had at Starbucks. At first I wondered about blending the cottage cheese as some other recipes state but I just went along with the recipe and trusted Amy and Jacky.
