It’s Amy + Jacky from Pressure Cook Recipes. How have you been these days? Hope you’re staying warm where you are. We miss traveling a lot. Thinking back on our first trip to Japan, one of the things we were really excited about was riding the Bullet Train! Right before hopping on our train from Tokyo to Kyoto, we bought some Ekiben (Railway Bento) for dinner. They're convenient "one box meals" specifically designed for you to eat on trains. There were so many tasty choices! And one of the popular meals was Beef Bowl Style Bento Box. Really simple yet tasty comfort food you can make at home! So we've been experimenting & kicking it up a notch with our version of Gyudon (Japanese Beef Rice Bowl) made in the Instant Pot. Love that sweet-savory beefy caramelized onion sauce!
