Ingredients

For Garnish

Instructions

  • Brown Chuck Roast Steak: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins) -you really want the Instant Pot to be as hot as it can be for the maillard reaction.

Pat dry the chuck roast steak and lightly season one side with salt + black pepper. Drizzle the inner pot with 1 tbsp olive oil. Then, place the seasoned side of the chuck roast steak in Instant Pot. Lightly season the other side with more salt + black pepper.

*Pro Tip: brown each side for 10 minutes to develop some awesome deep flavors.
*Note: If you prefer a "Dump-it-all-in" Recipe, you can skip the browning and saute steps.
  • Saute Onion and Herbs: Set browned chuck roast steak aside. If you want to serve the Italian Beef Sandwich with sauteed green bell pepper, saute then set them aside.
Add in sliced onions, saute until softened (~3 - 4 mins). Add in 1 tsp (1g) dried oregano, 1 tsp (1.2g) dried basil. If you prefer slightly spicy Italian Beef, add 1 tsp red pepper flakes. Saute for another minute.
  • Deglaze Instant Pot: Pour 1 cup unsalted stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon.
  • Pressure Cook Chuck Roast: Add in 1 tsp (3.5g) onion powder, 2 tsp (9g) garlic powder, 1 tbsp (15ml) soy sauce, 1 tbsp (15ml) fish sauce, and 1 tbsp (15ml) Worcestershire sauce. Give it a quick mix.
Place browned chuck roast steak back in Instant Pot and partially submerge it into the liquid as best as you can. Pressure Cook at High Pressure for 45 minutes + 25 minutes Natural Release.
  • Simmer Gravy & Shred Beef: Set aside chuck roast steak in a mixing bowl, then shred the meat with 2 forks. While you are shredding the meat, bring gravy back to a boil with the "Saute" function.
*Pro Tip: Reducing the gravy will naturally thicken it. If you find the gravy to be too oily, you can use a Fat Separator to filter out the fat.
  • Adjust Seasoning & Serve Instant Pot Italian Beef: Place the beef back in the yummy beefy gravy. Taste and adjust seasoning accordingly. Serve Italian Beef on Italian rolls.
Optional: Garnish with giardiniera and sauteed green bell pepper. Enjoy~ 🙂

  1. Absolutely love this and all your recipes!

I have a question. I usually make this using the 1-3 pound quantity. Can I double the meat (3-6 pounds) using all the same ingredient measurements including water?

    Keep the fantastic recipes coming!

  2. Wow!!! Since getting my InstantPot about 18 months ago, your website has become my go to source for amazing recipes. I have tried many (Japanese Beef Curry, Cheescake, etc….) and they have ALL been big hits with my whole family. We tried this one about two weeks ago and my daughter, who turns 14 tomorrow, just asked for this again for her birthday dinner!!!! Definitely a winner and frequent do over in our home! Thanks for all you do!

    1. Hi Joey,

Hope you had a wonderful New Year 🙂
Happy belated birthday to your daughter.

Thank you so much for your love and support!!

Happy New Year & please take care
      Jacky

  3. I’ve been looking for a recipe for Italian Beef Sandwiches like I had many years ago in Chicago. These weren’t what I was looking for, but we enjoyed them. Next time I’ll add more of the herbs and more broth so there will be more gravy for the sandwiches. Thanks for the recipe.

    1. Hi Razzy,

Hope you had a wonderful New Year 🙂
Thank you so much for your honest feedback & kind words on the recipe!

  4. I just made this and it turned out a bit salty but overall, taste is awesome and meat is great.
So my concern here is; ingredients says 1-3lbs of meat for the stated seasoning. Mine turned out salty because i doubled all my seasonings. What if i only cook a 1lb meat with the stated seasoning rather than a 3lb, my sauce would turn out salty as well. Im always confused on the quantities of seasoning for 1-3lbs of meat for quite a few recipes already.

    1. Hi Nick,

Hope you had a wonderful New Year & Christmas 🙂
Thank you so much for your honest feedback and kind words on the recipe!

The stated seasoning will mostly go into the sauce so doubling the seasonings will make the dish too salty.

The stated seasoning will work fine for 1 lb meat to 3 lb meat as the sauce will just be less beefy tasting with less meat.

Happy New Year & please take care

  5. A 5-star for sure. My daughter never really likes anything I cook. I marked the recipe excellent because she said it was really good and when I went to put it in my file I noticed she marked it THE BEST EVER. Now that really says something. A great big THANK YOU for the recipe.

    1. Hi Carole,

Hope you had a wonderful New Year & Christmas 🙂
Thank you so much for your kind words on the recipe!

Happy to hear your daughter enjoyed it as well!!

  6. Amazing! Umami was perfect. Nothing overpowered. Perfect blend. I did substitute red wine for 1/2 cup of the bullion. Love you guys. I can always count on your recipes to be perfect.

  7. Thank you for another excellent diner! Made it tonight, per your exact instructions, and it was great.

Pls keep.them coming via your emails to me!!!

  8. OK, so I can’t figure out what maillard (as in maillard reaction) means in your recipes. Can you please help me? Thanks so much for your time! Love your site!

    1. Hi Roxine,

Hope you had a wonderful New Year & Christmas 🙂
Thank you for your question. Maillard reaction is why the surface of the meat will become darker color when it is browning.

Happy New Year & please take care

  9. Love that y’all have done this! I too am Italian and from Chicago…This is a STAPLE food where I come from. I usually add some of the vinegar from the pepperoncinis and giardiniera (and sometimes a beer 😉 to the pot! Ya’ see…I need more gravy to make my sandwich “dipped” because…well, it’s the Chicago way! haha! Greasy and completely soggy! With that said, I’ll try out your recipe out because ALL of your recipes win best on the internet! Thanks for teaching me to cook better! Muah! It’s all in the “method” …

    1. Hi Ruth,

Hope you had a wonderful New Year & Christmas 🙂
Thank you so much for your kind words on the recipe!
