We’ve been experimenting with various Instant Pot Chicken Recipes, and Instant Pot Chicken & Dumplings has got to be one of the most requested recipes from our foodie readers.

So, here we go! Excited to present our final tweaked version to you!!

We invited some friends over to enjoy our big hearty pot of yummy chicken and dumplings.

And they adored those little homemade dough swimming in the sea of chicken deliciousness. To maintain peace & order, we had to fish for the dumplings and made sure everyone had their fair share. 😛

Instant Pot Dumplings Experiment

Some of you may normally make dumplings with Bisquick biscuit dough or canned biscuits, but hey! Try to make your own dumplings from scratch – it’s easy & tasty! Plus, you can probably find the few ingredients in your kitchen. 🙂

We tested cooking the homemade dumplings with 2 methods:

Test #1: Pressure Cooked with Chicken Soup (Left Photo)

Result: light & fluffy outer layer, moist, more flavorful (with more aromatics & flavors soaked into the dough) with denser core than being simmered

Test #2: Simmered in Chicken Soup (Right Photo)

Result: light & fluffy, soft, moist, slightly gooey, slightly dense core

Conclusion: We personally enjoy Test #1‘s dumplings better because it has better mouthfeel texture & greater overall flavors & aroma.

Ingredients

Optional Garnish

  • Fresh flat-leaf parsley , finely chopped
  • Heavy cream (2 tablespoons per bowl)

Dumplings (can substitute w/store-bought dough)

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon (12g) baking powder
  • 1 teaspoon (5g) salt
  • ¾ cup (188ml) milk
  • 2 tablespoons (28g) unsalted butter , melted
  • 1 tablespoon (15ml) olive oil
  • Fresh parsley or chives (optional) , finely chopped

Instructions

  • Brown Chicken Thighs: Heat up Instant Pot using Sauté More function. Wait until it says HOT. This prevents chicken thighs from sticking to the pot.

    Make Dumplings Dough: While Instant Pot is preheating, mix 2 cups (250g) all-purpose flour and 1 tbsp (12g) baking powder. In a separate container, mix 3/4 cup (188ml) warm milk, 1 tsp (5g) salt, 1 tbsp (15ml) olive oil, and 2 tbsp (28g) unsalted butter. Pour milk mixture into the flour mixture. Mix well to form a batter. Do not overmix.
    Pat-dry chicken thighs and season skin side with kosher salt & black pepper. Add 1 tbsp (15g) unsalted butter to Instant Pot, ensure the whole bottom is coated with butter. 
    Add 4 chicken thighs (skin side) in Instant Pot and brown for 3.5 minutes. Season the other side with kosher salt & black pepper. Then, flip and brown for 2 minutes. Set aside and repeat for remaining chicken thighs.
  • Saute Onions, Garlic, & Veggies: Add chopped onions, season with a pinch of Kosher salt & black pepper. Saute onions for roughly 2.5 minutes. Add minced garlic cloves and saute for 30 seconds until fragrant. Add chopped carrots & celery, then saute for 2 minutes. Add 2 bay leaves + a pinch of dried thyme, then let it cook for a minute until fragrant.
  • Deglaze: Pour in 1 cup (250ml) unsalted chicken stock and deglaze by scrubbing all the brown bits off the bottom of the pot. Give it a quick mix.
  • Pressure Cook Chicken and Dumplings: Add potato chunks, 4 cups (1000ml) unsalted chicken stock, browned chicken thighs + all meat juice.Drop dumplings on top with a teaspoon (they'll double in size after pressure cooking). With Venting Knob at Venting Position, close the lid and turn Venting Knob to Sealing Position. 
    Pressure cook at High Pressure for 3 minutes + Natural Release for 15 minutes. Then, Gradual Release (turn Venting Knob just enough to release pressure slowly) until Floating Valve drops. (See photo below for reference)
  • Shred Chicken Thighs: Set aside dumplings. In a large bowl, shred chicken and discard the skin & bones.
  • Thicken Chicken and Dumplings: Bring the soup to a simmer. Add in 1/2 - 1 cup (60 - 120g) frozen green peas. Stir and break some of the potatoes to thicken soup. In a mixing bowl, whisk together 1/2 cup (62.5g) all-purpose flour and a few ladles of soup until the flour fully dissolves. Thicken the chicken and dumplings soup to the desired thickness by mixing in the flour mixture one third at a time.
  • Season & Serve: Return shredded chicken and dumplings to pot. Taste and season with fish sauce or salt. Mix well and serve with finely chopped parsley and heavy cream if desired.

Brown Chicken Thighs


Heat up Instant Pot using Sauté More function.

*Tip: For older version, press “Saute” button, then “Adjust” button. For newer version, press “Saute” button twice.

Wait until it says HOT (takes roughly 8 minutes). This prevents chicken thighs from sticking to the pot.

While Instant Pot is preheating, mix 2 cups (250g) all-purpose flour and 1 tbsp (12g) baking powder in a large mixing bowl.

In a separate container, mix 3/4 cup (188ml) warm milk, 1 tsp (5g) salt, 1 tbsp (15ml) olive oil, and 2 tbsp (28g) unsalted butter together.

Pour milk mixture into the flour mixture. Mix well to form a batter. Do not overmix.

*Tip: You can skip the above steps for making dumplings if you’re using store-bought dough.

Pat-dry chicken thighs with paper towels and season the skin side with kosher salt and black pepper.

Add 1 tbsp (15g) unsalted butter to Instant Pot, then ensure the whole bottom is coated with butter.

Place 4 chicken thighs (skin side) in Instant Pot and brown for 3.5 minutes.

Season the other side with kosher salt & black pepper. Then, flip and brown for 2 minutes.

This is the color you are looking for. Set aside the browned chicken thighs and repeat for remaining chicken thighs.

Saute Onions, Garlic, & Veggies

Add chopped onions, season with a pinch of Kosher salt & ground black pepper. Saute onions for roughly 2.5 minutes.

*Pro Tip: We diced half of the onions and sliced the other half for better texture.

Add minced garlic cloves and saute for another 30 seconds until fragrant.

Add chopped carrots & celery to Instant Pot and saute for another 2 minutes.

Add 2 bay leaves and a pinch of dried thyme and let it cook for roughly a minute until the fragrance release from the spices.

Deglaze Instant Pot

Pour in 1 cup (250ml) unsalted chicken stock and deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.

Pressure Cook Chicken and Dumplings


Add potato chunks, 4 cups (1000ml) unsalted chicken stock, 8 browned bone-in chicken thighs in Instant Pot. Don’t forget the meat juice from the browned chicken thighs!

Drop the dumplings on top with a teaspoon. They will double or triple in size after pressure cooking 🙂

With Venting Knob at Venting Position, close the lid and turn Venting Knob to Sealing Position.

  • Pressure Cooking Method: Pressure cook at High Pressure for 3 minutes + Natural Release for 15 minutes

After 15 minutes, do a Gradual Release by turning Venting Knob just enough to slowly release pressure.

How to Gradually Release Pressure from Instant Pot Pressure Cooker

If you don’t want to keep your hands at the Venting Knob as you do a Gradual Pressure Release, you can use a wooden spoon to hold the Venting Knob (as shown in above photo).

When the Floating Valve drops, turn Venting Knob fully to Venting Position and open the lid carefully.

Shred Instant Pot Chicken Thighs

Carefully set aside the dumplings.

In a large bowl, shred the chicken meat and discard the skins & bones.

  1. I know I am not the only person who is sooo frustrated trying to find recipes for one or two persons. To make things even more difficult I am lactose I tolerant.

    However it’s possible to find some amazing cheese substitutes. Not so easy to find recipes for 1-2 persons. I am single and love good food. I always cook enough for 2 meals and then maybe enough to freeze for a later time.

    But ALL your recipes seem to be for families so I often just delete them. We are a huge overlooked segment by almost all food networks.

      Our recipes are for 4 people and for most of them you can just divide the recipe in half (The solid ingredients will be cut in half and the liquid ingredients will stay the same).

The best part of this recipe are the delicious dumplings. Those are what other recipes haven’t gotten right, but this one does. Delicious! I had 3 bowls and I could have kept eating more!

  7. Another winner from the best Instant Pot chefs ever. I cheated a bit and used Pioneer baking mix (the Texas version of Bisquick) for the dumplings and omitted the flour/broth thickener in favor of mashing as many of the potatoes as I could find. The finished product is chicken & dumplings heaven–so flavorful. I think the fish sauce and butter-sauteed everything get a lot of credit for the enhanced flavor.   9. I have tried a couple recipes for chicken and dumplings in the instant pot and this one is by far the best. It’s more complicated than some others, but I believe you get out it what you put in. In my opinion the homemade dumplings are best, but it works ok with the Grands biscuits as well.

  11. My husband and kiddo said this was delicious, and a keeper. I used boneless, skinless chicken breasts and hacked them into thirds for cooking. I also used homemade IP chicken bone broth, (made a few nights ago from a rotisserie carcass. If you haven’t made broth with your IP, I highly recommend it). My hubby is on an noninflammatory diet and cannot have nightshades (potatoes), an my kids are dairy free. I used unsweetened almond milk and earth balance for the dumplings, and turnips and rutabaga instead of potatoes. To thicken, a slurry equal parts water and arrowroot starch did the trick. My dumplings came out darker than I thought, but my broth was dark. They were still tasty enough for a picky 6 yr old. Thank you!

  13. I combined this recipe with Cook’s Country slow-cooker chicken and dumplings; used the technique and dumpling dough from this recipe and the ratios from Cook’s Country. This came out so flavorful and good. I’m definitely going to make this again. I have a question about the dumpling dough though. Mine came out more like a dough rather than a batter. I measured everything—perhaps the milk was too cold? Dumplings came out great though.

  16. This was my first time making chicken and dumplings in a pressure cooker even though C&D is one of my signature dishes. I didn’t really think the dumplings would turn out, but I was pleasantly surprised by how good they were. Everything turned out great. I gave it 5 stars even though I made some slight changes and thought it was a bit bland until I added some extra seasoning.

    I used more chicken, probably too much, but it was good with the extra meat. I removed the skin before returning the seared chicken to the pot before the pressure cooking. I added some more thyme, oregano, and poultry seasoning. I also added frozen corn and canned green beans, so it had onions, carrots, peas, green beans, and corn. The celery was put in as whole ribs and discarded after cooking. I omitted the potato.

    This recipe is a definite keeper. I’ll be making it this way from now on. Next time, just for comparison, I’m going to wait and make the dumplings after the chicken is taken out for shredding.

  17. Great recipe. Very flavorful. I did it as written except I did not thicken with flour as others said, it was thick enough for me. I would probably go back to my usual Bisquick dumplings to see if they work well next time as they are much easier. This was great on a cold day.

  19. Wow and wow. With a sprinkle of wow on the side.
    I’m not even sure I did this exactly right, but it was the best darn stew EVER! It was so thick, I may skip the flour and soup thickening step next time. With only a bit of salt, pepper and some butter, it ended up being so flavorful and delicious. I want to eat more but it’s so filling that I am stuffed already.
    Super worthwhile and will be put into regular circulation!

  22. Thank you Amy & Jackie, Happy New year to you. In my past question you said this recipe will work for an Express Crockpot. My question is: You say to put the Instant Pot on for 3 minutes the Express Pot does not have a button to do that. So what do I do??
    There is a button for Chicken and that is 15 minutes and a stew button that is for 35 minutes.

  24. I know it might be cheating, but… you could use pillsbury dough in the rolls and cut them up for times sake. Also, rotisserie chicken would be z time saver.

  28. Best chicken and dumplings I’ve ever made. Recipe is very forgiving, too. Ended up using half boneless skinless, half bone-in, skin on. Added 2 cups more chicken stock and an entire 16 ounce bag of frozen peas. Came out perfect and got even better the next 2 days. This is now a staple in my cool-weather rotation.

  29. Hi Amy & Jacky I was given a Quick Pot last year and had to return it for a call back so we bought a Express Crock – Crockpot instead. Will this recipe work the same? Not sure how to do the 3 minutes. There is buttons to change the pressure from high to low and there is a button to change temp. but do not see a button for time. I tried making the dumplings without a recipe for the pot and did not use the pressure cooker and left them to cook for 15 mins. They were quite doughy and not cooked my husband still loved the texture. He has no taste. lol Help please, obviously still trying to figure this pot out.

  30. I want to try this recipe but substitute the drop dumplings for the sheet/slippery dumplings that I found at my local grocery store. Have you heard of them? I was not sure how to adapt the recipe. I’m thinking because of the size of my 6 quart pot, I won’t need the whole box of frozen dumplings. Any ideas or guidance you might give me would be greatly appreciated. Thanks in advance!

      You will want to cut the sheet dumplings (if they come in one large sheet) into smaller size. About 18 – 22 small pieces will work great.

  31. First meal I tried on my Instant Pot Duo (6 litre). Special request from my wife. It turned out amazingly! I have never made dumplings before and I don’t think I have had them in 40 years. This brought back warm, comforting memories for me and for my wife who has also not had them in years.

    It is time consuming to make it but well worth the effort. Wonderful, tasty comfort food.

    This recipe is a keeper.

  34. In the dumpling ingredients it asks for 15ml of olive oil, but for the life of me, I can’t see anywhere in the recipe it says to use it??

  35. Loved the broth perfect for chicken pot pie but dumplings were tough. I want to try steaming them in the broth next time. Have you tried this and did the dumplings come out fluffy like in a pot on the stove?
    Have tried your bbq ribs, rotessorie chicken and received rave reviews. Your directions are so easy to understand. I’m a newbie and need lots of instruction but really enjoying learning from you both.

      The baking powder is what makes the dumplings fluffy.

      To test and see if the baking powder is still reactive, try adding boiling water to some of the baking powder and see if it bubbles heavily.

  36. The chicken and dumplings is delicious! I skipped the step of thickening the soup with flour bc I can taste raw flour easily plus the little bit of cream made it luscious! My first respond to my husband was, ” I cant wait to make this again!”

  37. I used pullsbury biscuits (about 3/4 can) instead of homemade – othwise followed the recipe to the t, leaving out the thickening with flour and adding cream. Turned out delicious. Thank you!!!

  39. Hi I usually make this the old fashion way on the stove. I’ve tried several of your ideas and love them all. I plan to try this way but need to ask after cooking can these be served out portions and put in containers for freezing. I’m making pre-made meals for my in-laws that they can remove and pre-heat, do you feel these will still have have same flavors and textures as when they were first cooked?
