It’s Amy + Jacky from Pressure Cook Recipes. How was your week? We’re excited to share our latest Test Kitchen Experiment with you - Melt-in-the-Mouth Chawanmushi (茶碗蒸し Japanese Savory Egg Custard)! For the past month, experimenting with one of our Japanese favorites has been a joy as we watched the Shōgun TV Series. Which transported us back to feudal Japan and immersed us in the world of daimyo and samurai. For sure brings back memories from “The Last Samurai”. We’ve tested different ratios, ingredients, and cooking times to make sure the Egg Custard achieves a silky smooth texture. Love how the custard and flavors delicately melt in the mouth.
