  • Heat up Instant Pot: Heat up Instant Pot using Sauté function. Wait roughly 1 minute, then add ¼ cup (63ml) water, ¼ cup (60g) granulated sugar, 1 tbsp (6.5g) cinnamon powder, ½ tsp (2.5ml) vanilla extract, and ½ tsp (3g) fine salt in Instant Pot. Mix well, then let the sugar melt.
  • Make Churro Candied Almonds: Once the mixture starts to bubble, add in 2 ¼ cups (240g) almonds, ¼ tsp (0.5g) cayenne pepper and ¼ tsp (0.8g) paprika. Stir and coat almonds well with cinnamon mixture. As usual, taste & adjust seasoning accordingly. It may look runny at first. Let the almond caramelize in the churro mixture for roughly 3 - 4 minutes.
    *Pro Tip: The almonds are done when all the churro mixture are gone.
  • Serve Instant Pot Churro Candied Almonds: The almonds will stick together once they are chilled. So, spread them apart and let them cool completely in a single layer on a parchment paper in a tray. If you prefer, sprinkle some extra sugar onto the Churro Candied Almonds. Heat up Instant Pot


Heat up Instant Pot using Sauté function.

 

You don’t have to wait until it says HOT for this recipe.

Wait roughly 1 minute before adding ¼ cup (63ml) water, ¼ cup (60g) granulated sugar, 1 tbsp (6.5g) cinnamon powder, ½ tsp (2.5ml) vanilla extract, and ½ tsp (3g) fine salt in Instant Pot Pressure Cooker.

Mix well and let the sugar melt.

Make Churro Candied Almonds


Once the mixture starts to bubble, add in 2 ¼ cups (240g) almonds, ¼ tsp (0.5g) cayenne pepper and ¼ tsp (0.8g) paprika.

Stir and coat almonds well with cinnamon churro mixture. As usual, taste & adjust seasoning accordingly. 🙂

    Is there a trick that I’m missing to prevent them from sticking together? I did TRY to spread them out on parchment but was unsuccessful.

  2. Maybe I’ve made these three times already ??? Absolutely delicious! Thank you for the great recipe; it’s definitely a hit in my home!

    I do roast them at 350 for 5-8 minutes (depending on batch size) to get them extra crunchy and I can’t get enough!

    I don’t have much experience cooking and your recipe seems easy to follow. When you say cinnamon powder is that the same as “ground? Also fine salt, is that regular salt?

      Yes, cinnamon powder is the same as ground cinnamon.

      You can use regular salt as fine salt.

      Candied almonds can be kept at room temperature for roughly 1 – 2 weeks in a bag.

  6. I had to try this as soon as I read the recipe.
    I bought pecans yesterday for a maple syrup/siracha recipe but this sounded fun too.

    I use paprika a lot and have sweet, smoky and hot. I went for smoky paprika and upped the cayenne to half a tsp. Also used both brown and granulated sugar.

    The pecans are spicy hot and sweet both and very very good.

    I think I’m going to add maple syrup next time. And try to rescue a can of mixed nuts left over from last summer too. This would go well with any nut.
