My dad absolutely loves going to yum cha 飲茶 as far back as I can remember. And Black Bean Sauce Spare Ribs and Rice 豉汁排骨飯 is one of his favorites! A must-order every time we go “Dim Sum”-ing.

Ever since he attended Chinese culinary school, he makes a lot of dim sums at home, like these Shumai Pork Dumplings. And I was his most avid taste-tester chomping down all his experiments. hehe~

So this year’s Father’s Day, we’ve recreated my Dad’s favorite Spare Ribs and Rice in Instant Pot!

You won’t believe how Easy it is to make in the Instant Pot, and how Tasty it comes out!!

Ingredients

  • 1 pound (454g) pork spare ribs , cut into pieces
  • 1 tablespoon (15ml) oil
  • cup (345g) Jasmine rice , rinsed
  • cup (375ml) cold water

Black Bean Marinade

Garnish

  • Green onions , finely sliced
  • 1 Thai chili , finely chopped (Optional)

Instructions

  • Marinate Spare Ribs: In a mixing bowl, marinate spare ribs with Black Bean Marinade for at least 30 minutes and up to overnight in the fridge.
  • Pressure Cook Spare Ribs and Rice: Mix marinated ribs with 1 tbsp (15ml) oil, then place in Instant Pot. Try to fill the whole Instant Pot bottom with a single layer of spare ribs. Then, layer 1½ cup (345g) Jasmine rice on the spare ribs. Add 1½ cup (375ml) cold water. If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead. Ensure all the rice are submerged in liquid. Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.
    *Pro Tip: Ensure spare ribs are at the bottom, then rice on top.
  • Season and Serve Instant Pot Spare Ribs and Rice: Fluff and gently mix the spare ribs and rice. Taste and season with more salt or soy sauce if necessary. Garnish with finely sliced green onion. Add Thai chili to spice it up! Serve immediately. 🙂

Marinate Spare Ribs


Place 1lb (454g) pork spare ribs in a mixing bowl.

Add in 1.5 tbsp (22.5g) black bean sauce, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) Shaoxing wine or water, 1 tbsp (15g) grated ginger, 3 (14g) minced garlic cloves, 1 tsp (5ml) sesame oil, 1 tsp (4g) sugar, 1 tsp (5ml) fish sauce, and a pinch of white pepper.

Mix well and marinate for at least 30 minutes and up to overnight in the fridge.

Pressure Cook Spare Ribs and Rice


Mix marinated pork spare ribs with 1 tbsp (15ml) oil and place them in the Instant Pot.

*Pro Tip 1: Try to fill the whole bottom of Instant Pot with a single layer of spare ribs (as shown in below photo).

Layer 1 1/2 cup (345g) Jasmine rice on the spare ribs and then add in 1 1/2 cup (375ml) cold water.

If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead.

*Pro Tip 2: Ensure to place spare ribs first at the bottom of the pot, then rice on top. Don’t change the order (as shown in below photo).

Close the lid and turn the Venting Knob to Sealing Position.

  • Pressure Cooking Method: Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.

If the Floating Valve doesn’t drop after 10 minutes, turn the Venting Knob to Venting Position to release the remaining pressure.

  1. This was delicious! My ribs were not chopped into bite sized, so I cut into strips and did 16 min high pressure + 10 min natural release. Used half brown rice due to longer cook time and everything was still perfect. Thank you.

  5. I tried this dish this past weekend, it was DELICIOUS! I was at first a bit dubious about the amount of water needed with the rice, because usually it takes about 2x the amount of rice. But I stuck to your recipe and it turned out beautifully. The rice tasted yummy because it picked up the fragrant and taste of the marinade, and the jasmine rice resulted in a more “chewy” texture than normal when I cook them in a regular pot. We love it. Thank you for having all these “home style” Chinese recipes. They remind me of my childhood. 😉

  7. The recipe calls for 1.5 cups of rice (345g). However isn’t 1.5 cups of rice only equal to about 277 grams? I looked on line and 1 cup of uncooked rice is about 185g, therefore 1.5 cup would be roughly 277 grams. For this recipe, should I use 345g or 277g of rice?

  8. This is so easy to make and its so good. I was a bit too adventurous and increased the marinade amount and it got a bit salty, im sure it would had been perfect if i just stuck with recipe. Will try again next time. But even with it being a bit salty i still loved it very much, just add some plain rice to it.

  9. Hi! I made this for dinner tonight and it was DELICIOUS. We doubled the recipe, and the rice came out perfectly, but in the end there was too much rice. I’m wondering what to do if I want 2 lbs of ribs and 2 cups of rice. How much water should I use? Would 2 cups be enough?

    If I was to just make the spare ribs, do i need to put less water?

    Back at home I’m used to the steamed method over the stove, would submerging the ribs in water make it less tasty?

    I should have search for the recipe before I start cooking… o well!

    So I have a block of frozen pre-marinaded spare ribs and a small container of frozen pre-made shiitake mushrooms, and quite a bit frozen cubed kabocha (my mom and nanny prep meals for me – so grateful!). Without thinking I just washed 5 cups of rice, added water to line 5, and dumped all the frozen stuff on top. Now that I see the spare ribs layer should be on the bottom… I will find out the result tomorrow (it’s to pack for lunch tomorrow), but does the trick apply if the meat is frozen? And I picked “steam” high pressure 15 mins… we shall see…

  16. I made this last night and it was SO DELICOUS!! I didn’t have spare ribs at my local store so we substituted it with pork belly. I read through all the commments and multiplied the recipe by 1.5x given that I had 1.5 lbs of pork belly. The rice wasn’t soggy at all and had a perfect consistency of sticky rice. I served with a side of tea eggs and Chinese broccoli, bribing me back to memories of my moms home cooking!

    So glad that I’m now able to produce these recipes myself 🙂 keep up the amazing work!!

  17. The recipe says to add 1 tbsp oil to the spare ribs before putting into instant pot. I had previously quadrupled the recipe so i added 4 tbsp of oil. When everything was cooked, there was a huge pool of oil at bottom of cooker. Can i reduce the amount of oil or is all 4tbsp required? It was delicious though =)

  22. The rice is too way soft, nothing like the dim sum version. If I removed the rice (make the rice in a rice cooker) and just cook the spare ribs, how long should I program it for?

      It sounds like the spare ribs you have released more juice than mine. I would recommend reducing the cooking liquid by 1/4 – 1/2 cup.

      If you want to skip the rice, the cooking time will be the same.

  23. We don’t eat white rice anymore can I make it with brown rice I know rice won’t be as fragrant if I use brown rice how long will it take thanks

  25. This might be a silly question…. but would this work with spare ribs that haven’t been cut into smaller sizes?? I have a whole rack of spare ribs and I don’t think I’ve got a tool that’ll chop them up into smaller pieces easily. I would cut the rack up, but keep the bone on… if that makes sense…?

      Quadruple amount of pork and rice will require more accurate measurement on the rice and water ratio.

      The rice and water ratio is the same for Calrose rice (medium grain)

      The pressure cooking time can be reduced by ~2 minutes for such large amount.

    2. thank you for the modification instructions to quadruple the recipe. i did not quadruple the rice portion (only used 4 cups rice and 3.33 cups water) but quadrupled everything else. i reduced cooking time by 2 mins as you suggested. recipe turned out PERFECT!! it was so delicious!!!!! thank you!

  31. This was delicious and so easy! I do find the rice soggy and not enough for my taste. Solution I would add 2 cups of rice reasonably well rinced to 1 and half cup of water instead. (Ribs releases liquid too). Or if you have white rice aside from previously add some and mix. Keep up the good work!

  32. It taste very good but somehow the rice is a bit soggy in comparsion from it coming out of a rice cooker. I probably used a bring more rib as for me it barely fit on the bottom. Other than that I used 1 and a half cup of rice and 1 and a half cup of water as instructed

      The rinsed rice has to be drained really really well or there will be an extra 40 – 60ml of water absorbed to the rice.

      I would recommend removing about 2 – 3 tablespoons of water from the 1 1/2 cup of water next time.

  33. Can you use medium grain rice instead of jasmine rice? Adjust liquids?

      Medium grain rice will work just fine.

      To make black bean sauce, you will need to use some oil to cook the fermented black beans and garlic first.
