My dad absolutely loves going to yum cha 飲茶 as far back as I can remember. And Black Bean Sauce Spare Ribs and Rice 豉汁排骨飯 is one of his favorites! A must-order every time we go “Dim Sum”-ing.

Ever since he attended Chinese culinary school, he makes a lot of dim sums at home, like these Shumai Pork Dumplings. And I was his most avid taste-tester chomping down all his experiments. hehe~

So this year’s Father’s Day, we’ve recreated my Dad’s favorite Spare Ribs and Rice in Instant Pot!

You won’t believe how Easy it is to make in the Instant Pot, and how Tasty it comes out!!

  • Spareribs – super tender with a bite, moist & juicy, real flavourful
  • Rice – packed with fragrance and soaked with flavors from black bean sauce marinade & spare ribs

Ingredients

  • 1 pound (454g) pork spare ribs , cut into pieces
  • 1 tablespoon (15ml) oil
  • cup (345g) Jasmine rice , rinsed
  • cup (375ml) cold water

Black Bean Marinade

Garnish

  • Green onions , finely sliced
  • 1 Thai chili , finely chopped (Optional)

Instructions

  • Marinate Spare Ribs: In a mixing bowl, marinate spare ribs with Black Bean Marinade for at least 30 minutes and up to overnight in the fridge.
  • Pressure Cook Spare Ribs and Rice: Mix marinated ribs with 1 tbsp (15ml) oil, then place in Instant Pot. Try to fill the whole Instant Pot bottom with a single layer of spare ribs. Then, layer 1½ cup (345g) Jasmine rice on the spare ribs. Add 1½ cup (375ml) cold water. If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead. Ensure all the rice are submerged in liquid. Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.
    *Pro Tip: Ensure spare ribs are at the bottom, then rice on top.
  • Season and Serve Instant Pot Spare Ribs and Rice: Fluff and gently mix the spare ribs and rice. Taste and season with more salt or soy sauce if necessary. Garnish with finely sliced green onion. Add Thai chili to spice it up! Serve immediately. 🙂

Marinate Spare Ribs


Place 1lb (454g) pork spare ribs in a mixing bowl.

Add in 1.5 tbsp (22.5g) black bean sauce, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) Shaoxing wine or water, 1 tbsp (15g) grated ginger, 3 (14g) minced garlic cloves, 1 tsp (5ml) sesame oil, 1 tsp (4g) sugar, 1 tsp (5ml) fish sauce, and a pinch of white pepper.

Mix well and marinate for at least 30 minutes and up to overnight in the fridge.

Pressure Cook Spare Ribs and Rice


Mix marinated pork spare ribs with 1 tbsp (15ml) oil and place them in the Instant Pot.

*Pro Tip 1: Try to fill the whole bottom of Instant Pot with a single layer of spare ribs (as shown in below photo).

Layer 1 1/2 cup (345g) Jasmine rice on the spare ribs and then add in 1 1/2 cup (375ml) cold water.

If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead.

*Pro Tip 2: Ensure to place spare ribs first at the bottom of the pot, then rice on top. Don’t change the order (as shown in below photo).

Close the lid and turn the Venting Knob to Sealing Position.

  • Pressure Cooking Method: Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.

If the Floating Valve doesn’t drop after 10 minutes, turn the Venting Knob to Venting Position to release the remaining pressure.

I made the INSTANT POT SPARE RIBS AND RICE for dinner tonight and it was a hit!
I used my 8 qt. IP, doubled the recipe and had the same 13 min high pressure cook time. Natural release took about 20 min.

I want to use this in my potluck for 10+ people, and wanted to work with 5 lbs of ribs. Can I scale up everything in proportion? i.e. 5X more rice, water, and ingredients, while keeping the cooking time the same??

This was delicious! My ribs were not chopped into bite sized, so I cut into strips and did 16 min high pressure + 10 min natural release. Used half brown rice due to longer cook time and everything was still perfect. Thank you.5 stars
