Instant Pot Roasted Potatoes Experiment

Pressure Cooker: Instant Pot Electric Pressure Cooker
Altitude: close to sea level
Pressure: High Pressure (10.15~11.6 psi)
Pressure Cooking Time: 8 mins – 24 mins
Release Method: Quick Release

We conducted 6+ tests with mixed baby potatoes at different cooking times & different cooking methods (Pot-in-Pot vs. Steamer Basket) in our Instant Pot Electric Pressure Cooker.

From the experiments, we found that cooking baby potatoes in a Stainless Steel Steamer Basket is more ideal than a Stainless Steel container using the Pot-in-Pot cooking method.

So, our most desired result in pressure cooking baby potatoes is Test #6. It produced the best texture & mouthfeel.

Ingredients

  • 1.5 pound (680g) baby potatoes
  • 1 teaspoon (4g) onion powder
  • 1 teaspoon (4g) garlic powder
  • 3 - 4 pinches coarse kosher salt
  • 2 tablespoons (28g) unsalted butter
  • 1 tablespoon (15ml) olive oil
  • 1 cup (250ml) cold water

Instructions

  • Pressure Cook Baby Potatoes: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot Pressure Cooker. Place 1.5 lb (680g) baby potatoes in steamer basket. Pressure Cook at High Pressure for 15 minutes, then Quick Release. 
    *Pro Tip: This will produce creamy & soft baby potatoes. If you prefer a firmer texture, reduce the pressure cooking time by a few minutes. (See Our Roasted Potatoes Experiment Results Here)
  • Make Creamy Roasted Potatoes: Set aside the pressure cooked baby potatoes. Discard water in inner pot & towel dry inner pot. 

    Heat up Instant Pot using "Saute" function (press "Cancel" button, then "Saute" button). 
    Once the indicator says HOT, add 2 tbsp (28g) unsalted butter and 1 tbsp (15ml) olive oil in Instant Pot. 
    Add pressure cooked baby potatoes in Instant Pot. With a wooden spoon, gently stir the baby potatoes to coat them with butter. 
    Sprinkle 1 tsp (4g) garlic powder and 1 tsp (4g) onion powder on the baby potatoes. Gentle mix the baby potatoes, then allow the powder to darken & harden a little. 
    Taste & season Instant Pot Roasted Potatoes with salt and black pepper (if desired). For reference, we used roughly 4 pinches of coarse kosher salt.
  • Serve Instant Pot Roasted Potatoes: The Roasted Potatoes in Instant Pot will be piping hot, so let it cool for roughly 5 minutes before serving. Enjoy!~ 🙂

Pressure Cook Baby Potatoes


Pour 1 cup (250ml) cold water, then place a Stainless Steel Steamer Basket in Instant Pot Pressure Cooker.

Place 1.5 lb (680g) baby potatoes in the steamer basket.

Close lid and turn Venting Knob to Sealing position.

  • Pressure Cooking Method: Pressure Cook at High Pressure for 15 minutes, then Quick Release.

*Pro Tip: This will produce creamy and soft baby potatoes. If you prefer a firmer texture, reduce the pressure cooking time by a few minutes.

Once the pressure cooking cycle ends, carefully turn the Venting Knob to Venting position to release all the pressure.

Open the lid immediately once the Floating Valve has dropped.

Make Creamy Roasted Potatoes


Set aside the pressure cooked Instant Pot baby potatoes.

Discard water in the inner pot & towel dry inner pot.

Then, heat up the Instant Pot using the “Saute” function.

Press “Cancel” button, then “Saute” button.

Once the indicator says HOT, add 2 tbsp (28g) unsalted butter and 1 tbsp (15ml) olive oil in Instant Pot.

Add pressure cooked baby potatoes in Instant Pot Pressure Cooker.

  4. I have 3lb of Yukon potatoes. Can I just double the other ingredients/seasonings and just decrease the cooking time by 1 minute??? Excited to try this recipe out for Easter tomorrow!:)

  6. How long would I cook the really tiny “creamer” potatoes? They’re very very small. I’m thinking 15 minutes as in this recipe would be way too long. I’ve seen others say 8 minutes but that too seems long, because when I cook quartered big potatoes for the pot roast recipe I have to reduce cooking time so they don’t turn into mush. Any ideas? Thanks!

  9. These are THE MOST AMAZING potatoes ever! My “Instant Pot” is actually a Meuller brand, they all work the same, fantastically! I had a few of the potatoes crack, no problem! They mostly held together. The one that didn’t just added to the yummy buttery seasonings in the bottom of the pot and everything just cooked up so wonderfully. My Hubby raved! Thank you!

  12. These potatoes were great! Crisp, soft, and firm all at once! I am in love with fresh minced garlic, so I tried this instead of the powder, but the high heat of the saute browned them too much before the potatoes were crispy. Next time I will use the garlic powder as suggested.

  13. I made a double recipe using your tip to reduce cooking time by a minute. I was very happy with the results. I did the saute’/season step in two batches, as it seemed that it would be more manageable. When I’m looking for an Instant Pot recipe, I check, first, for an Amy and Jacky recipe because I feel that I can trust it.

  14. Is it possible to double this recipe, or will I need to make 2 separate batches if I need to cook for 8 people? If I can double the recipe, do I need to adjust the cooking time? Thank you for your help!

  15. Janet, I have a pressure cooker that is not an IP and I haven’t met an IP recipe that doesn’t work. The settings are somewhat different (no saute button, I just have to hit start), but my manual explained everything.

  16. I have a stove top pot and I have to remember that stove top models cook a little bit faster than the Instant Pot – some of my potatoes burst! A bit messy when I got to the butter and oil part but still these were so creamy inside (DH loved that) and I got some crispness (I loved that). I love the pressure cooker for doing potatoes, perfect but not watery like boiling and so much faster than roasting. Will do these again, adjusting for my own cooking equipment as one always has to, no matter what the recipe. Your directions and experiments showing the difference timing and in this case inside container can make are still the best on-line.

Made this tonight for Thanksgiving dinner, and it was a hit amongst everyone, even my aunt who is not the biggest fan of potatoes kept popping them In her mouth. The texture was perfect, just as you guys promised, crispy on the outside and creamy on the inside. At the end, for extra flavor, I sprinkled “Everything but the bagel sesame seasoning blend” from Trader Joe’s all over, and it was scrumptious. Will be making again for Christmas.

  20. I have to unsubscribe from this blog. Maybe it’s time to change the name to “instapot recipes” instead of pressure cooker recipes, so others aren’t misled. If you want to only do recipes specific to instapot that’s fine, but those of us with regular pressure cookers will go elsewhere.
