Ingredients

  • 2 large eggs
  • 2 large egg yolks
  • ½ cup (125g) unsalted butter
  • 1 tablespoon (9g) all purpose flour
  • ¼ cup (52g) granulated sugar
  • 3.5 - 4 oz (100g - 113g) bittersweet dark chocolate
  • ½ teaspoon (2.5ml) vanilla extract
  • A pinch salt
  • Powdered sugar for topping

Instructions

  • Melt Chocolate & Unsalted Butter: Melt 3.5oz - 4oz (100g - 113g) 70% cacao dark chocolate with ½ cup (125g) unsalted butter.*Pro Tip: use the double boiler method or the microwave (30-secs interval & mix).
  • Make Egg Mixture: In a large mixing bowl, add 2 large eggs, 2 large egg yolks, ¼ cup (52g) granulated sugar, and a pinch of salt. Mix ingredients for 1 minute with a hand mixer using medium speed.
  • Make Chocolate Lava Cake Mixture: Slowly pour in and mix the chocolate-butter mixture with the egg mixture (*Pro Tip: the chocolate-butter mixture can be hot, so you don't want to pour them all in at once). Add ½ tsp (2.5ml) vanilla extract. Then sift in 1 tbsp (9g) all-purpose flour. Mix everything together with a spatula until everything is well mixed.
  • Pressure Cook Lava Cake: If you are planning to remove the lava cakes from the ramekins to serve, spray the ramekins with cooking spray. Carefully pour the lava cake mixture into 4 x 6oz-ramekins. Then tap the ramekins against the counter a few times to remove air bubbles. Add 1 cup (250ml) cold water in Instant Pot. Place trivet in Instant Pot, then stack the ramekins on top. Pressure cook at High Pressure for 7 - 9 minutes + Quick Release.
    *Pressure Cooking Times:
    -Thicker Pyrex Glass Ramekins: High Pressure 8 - 9 minutes + Quick Release


    -Standard Ramekins: High Pressure 7 minutes + Quick Release
    Carefully open the lid (avoid dripping the condensation on the lava cakes!)
  • Serve: Quickly place the ramekins on a cooling tray, then serve immediately once the ramekins are cooled to touch. Sift powdered sugar on the chocolate lava cake, then decorate the cake with a strawberry. You can also serve with a scoop of ice-cream on your lava cake. Make Lava Cake with Cocoa Powder?

For our first experiment, we used a combination of Bittersweet Chocolate + Cocoa Powder. The result was too rich and dense, so we decided to omit the cocoa powder in our final Instant Pot Lava Cake Recipe.

Which Chocolate to Use for Lava Cake in Instant Pot?

We experimented our lava cake recipe with 3.5oz (100g) Lindt 70% Cacao Dark Chocolate bar & 4 oz (113g) Hershey’s 70% chocolate chunks. They both worked fine. 🙂

Melt Chocolate and Unsalted Butter


Melt 3.5oz – 4oz (100g – 113g) 70% cacao dark chocolate with ½ cup (125g) unsalted butter.

Make Egg Mixture


In a large mixing bowl, add 2 large eggs, 2 large egg yolks, ¼ cup (52g) granulated sugar, and a pinch of salt.

Add ½ tsp (2.5ml) vanilla extract.

Then sift in 1 tbsp (9g) all-purpose flour.

Pressure Cook Chocolate Lava Cake


If you are planning to remove the Instant Pot Cakes from the ramekins to serve, spray the ramekins with cooking spray.

*Pro Tip: If you’re serving the Instant Pot Cakes with the ramekins (more convenient & less messy to eat), skip spraying the ramekins with cooking spray.

Carefully pour the chocolate lava cake mixture into 4 x 6oz-ramekins.

Then tap the ramekins against the counter a few times to remove air bubbles.

Turn Venting Knob to Venting position to quickly release the pressure.

Quickly place the ramekins on a cooling rack, then serve immediately once the ramekins are cooled to touch.

  1. The favor was alright but the texture wasn’t and there was no oozing of chocolate. I did 6 minutes, NPR and they were over done. I used the silicon egg bite molds.

  2. I usually love your recipes but this one was awful. The “cake” wasn’t cake like with very little molten chocolate in the middle. I did use a lower percentage of chocolate than 70% so it was probably my fault, but I’ll be sticking to traditional oven cooking for my lava cakes from now on. I love your teriyaki chicken and lemon chicken and every other recipe I’ve tried on the site.

  5. Two questions: Can you freeze them to have later? Can you use 60% cacao without changing recipe (70% was not available)?

  9. I don’t have ramkins. Can this be made in a single larger Pyrex bowl? Do I have to adjust cooking times beyond the extra two minutes?
