Ingredients

  • 1 pound (454g) baby carrots
  • 2 tablespoons (28g) unsalted butter
  • 2 tablespoons (25g) brown sugar
  • ½ teaspoon (2.8g) table salt
  • Ground black pepper to taste

Instructions

  • Pressure Cook Carrots: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot. Add 1 lb (454g) carrots in steamer basket. Pressure Cook at High Pressure for 2 minutes, then Quick Release.
  • Make Buttery Sweet Carrots: Set aside the pressure cooked carrots. Discard the water in inner pot. Towel dry inner pot, then heat up the Instant Pot using the "Saute" button. Once the indicator says HOT, add in 2 tbsp (28g) unsalted butter. Add in the cooked carrots, 2 tbsp (25g) brown sugar, and ½ tsp (2.8g) table salt. Saute for roughly 2 minutes until the sugar melts and coat the carrots.

Pressure Cook Carrots


Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in the Instant Pot.

Instant Pot Carrots: add water and steamer basket in Instant Pot Pressure Cooker

Place 1 lb (454g) carrots in the steamer basket.

Instant Pot Carrots: add carrots in Instant Pot Pressure Cooker

Close lid and turn Venting Knob to Sealing position.

Pressure Cooking Method: Pressure Cook at High Pressure for 2 minutes, then Quick Release.

Once the pressure cooking cycle ends, carefully turn the Venting Knob to Venting position to release all the pressure.

Open the lid once the Floating Valve has dropped.

Make Buttery Sweet Carrots


Set aside the pressure cooked carrots.

Discard water in the inner pot.

Towel dry the Instant Pot inner pot, then heat up the Instant Pot using the “Saute” button.

Once the indicator says HOT, add 2 tbsp (28g) unsalted butter in Instant Pot.

Add in the cooked carrots, 2 tbsp (25g) brown sugar, and ½ tsp (2.8g) table salt.

Saute for roughly 2 minutes until the sugar has melted and coated on the carrots.

  2. Thank you for this recipe! I have tried many different times to make sweet carrots and failed. This was so easy and even my 15yr old daughter who doesn’t eat carrots ate a big portion of these.. I did have to cook about 18mins in my pressure cooker to get them soft to my liking and I did not have a steam basket so I just cooked them in the bottom of the pot in the water. I will be making these often, they were delicious!

  4. ⭐️⭐️⭐️⭐️⭐️ Just made these carrots ? in my Ninja instant pot. They are delicious ? I will definitely make them again, but I will Just melt the butter and glaze on the stove. They were very good, but it seemed like it took the seat function a while to get hot enough. It worked, I was just impatient.

  5. Amy you have to try fresh carrots from a farmers market. Using your recipe the taste is so much sweeter than the prepackaged ones from the store.

  6. Do you have to change the amount of water if you quadruple this recipe? Also, will it take longer to get to pressure or cook? Thanks!

  7. Hi Amy and Jacky likewise I didn’t have baby carrots on hand so I cut up regular carrots and they were delicious. I made them for Thanksgiving dinner on Sunday and the family loved them. Will have to try them with baby carrots to compare. Thanks again for all the great recipes.

  8. I saw this posted yesterday and could not wait to try it. In fact I was so eager to try it that instead of using baby carrots -which I did not have- I just peeled and cut up regular sized carrots.
    These came out delicious. I am going to add them to my Thanksgiving menu this year.
