Mexican Homemade Salsa Recipe (Pico de Gallo) Ingredients
  • ~700 grams tomatoes (we used 4 (400g) roma, 3 (200g) cocktail, and 8 (90g) grape tomatoes), roughly diced
  • 1 (280g) red onion, finely diced
  • 3 garlic cloves, minced
  • 38 grams fresh cilantro, finely chopped
  • 1 (61g) Jalapeno, finely diced
  • 80 grams juice from 1 – 2 fresh lime
  • Kosher Salt
  • Ground black pepper to taste

What Types of Tomatoes to Use?

We used three different kinds of tomatoes to increase the complexity of the Salsa. You can use any of your favorite tomatoes. 🙂

Step 1
Prepare the Salsa Ingredients

Ingredients

~700 grams tomatoes (we used 4 (400g) roma, 3 (200g) cocktail, and 8 (90g) grape tomatoes), roughly diced
1 (280g) red onion, finely diced
3 garlic cloves, minced
38 grams fresh cilantro, finely chopped
1 (61g) Jalapeno, finely diced

Prepare the ingredients by cutting from driest to wettest.

Step 2
Make Salsa Fresca

Ingredients

Diced tomatoes
Finely diced red onions
Minced garlic
Finely chopped fresh cilantro
Finely diced Jalapeno
80 grams juice from 1 – 2 fresh lime
Kosher Salt
Ground black pepper

Add diced tomatoes, diced red onions, minced garlic, and chopped cilantro in a large mixing bowl.  Mix well.

Taste one piece of finely diced Jalapeno to determine the spiciness level. Add in the amount of Jalapeno based on your personal preference (we added roughly 3 tbsp). Mix well.

Squeeze juice from 1 lime and mix well.

Season with Kosher salt & fresh ground black pepper. Mix well.

Taste and adjust accordingly. Make sure everything is balanced. Add in the juice from another lime if necessary.

Step 3
Serve Homemade Salsa (Pico de Gallo)

Homemade Salsa Storage:

You can store the Homemade Salsa in the fridge for up to 3 days.

Prevent Watery Salsa with Salt:

Salt will draw out the moisture from fresh tomatoes.

So, if you don’t like your Salsa to be too wet, place the diced tomatoes in a mesh strainer and mix them with 1 tsp kosher salt for 20 – 30 minutes prior to mixing them with the rest of the ingredients.

  1. Cilantro is a common ingredient in Mexican dishes. While for 90% of the population it apparently has a pleasant herbal taste, 10% of the population GENETICALLY is able to taste a chemical compound in cilantro the others cannot. For us, cilantro tastes like SOAP. This aldehyde we taste in cilantro is also found in soap! Any quantity of cilantro in food makes it unacceptable to me/us. When creating a dish containing cilantro, would it be possible to suggest alternative herbs/seasonings which would result in a close approximation to cilantro’s taste without the ‘soapyness’?

      There isn’t really anything that can replace Cilantro. So I recommend skipping it or using parsley.

  3. Try a bit of chopped Bell pepper added to it for even more complexity!
    Then enjoy the delicious smell when poaching an egg in the salsa with a tiny pinch of cumin and chili powder added, in a partially covered skillet for huevos rancheros! Yum!

  4. No concentrated paste,I am using 6-8 cans of diced tomatoes (28 oz each). It comes with the its juice too. Do I drain the juice or keep it. is 5 minutes enough to cook this? The tomatoes turn a dark red on the stove top after 3-4 hours. I was reading conflicting recipes for pressure cooking at 25-45 minutes. so i am confused.

      thank you for your reply. You will want to keep the juice.

      5 minutes + Natural Release is enough to cook this, but you will also need to keep on stirring to get the dark red color (concentrated & caramelizing by reducing the liquid) on stovetop.

  5. I just want to pressure cook diced tomatoes to fill 2/3 of my 8 quart instant pot. I am making a Mediterranean salad in large quantity. Normally, I cook on stove top for 4 hours constantly stirring. Can I do this in the instant pot? for how long?

      thank you for your question 🙂

      Are you cooking the tomatoes into a concentrated paste?

      If so I would cook the tomatoes for 5 minutes + Natural release in the Instant Pot. After that, you will have to saute with constant stirring to reduce the liquid for the concentrated flavor.
