What are your favorite vegetables? Broccoli is one of our go-to daily veggies. Even when Jacky asks me to pick up some Bok Choy at our supermarket, I would somehow end up with some Broccoli. AND he wouldn’t be surprised. hehe~ 😛 I love the crunch, the flavors, and the nutrients!

Broccoli is an excellent source of Vitamin C & Vitamin K. More so, it’s low in fat, carbohydrates, and calories. However, don’t overcook them! Overcooked broccoli not only becomes soft and mushy, but the flavors and nutrients will be lost.

Even way before we bought our pressure cookers, we love steaming our broccoli, as steaming broccoli helps preserve its’ nutrients and flavors. So, we wanted to test how well broccoli cooks in the pressure cooker and did a mini cooking time test!

Cooking Method: on a steamer rack
Liquid: 1 Cup of cold running tap water
Release Method: Quick Release
Results: Broccoli was slightly overcooked with a little crunch, but it has already lost some of the bright green color.

Tips for Pressure Cooker Broccoli with Garlic Recipe

1. Always Taste! Always taste to avoid overseasoning.

2. Don’t Overcook! Do not sauté the broccoli florets for too long or they will turn yellow and lose the crunchiness.

3. Want Restaurant Quality? 

Restaurants usually finish the dish by adding chicken stock and thicken the sauce with cornstarch water. The Instant Pot Electric Pressure Cooker does not get hot enough for those steps, so we omitted them.

If you are using a wok on high heat, after the salting step, add in 1/3 cup unsalted chicken stock. Bring it to a boil quickly and thicken it by gradually adding the (1 ½ tablespoon) cornstarch + (2 tablespoons) water mixture.

Ingredients

  • 1 - 2 heads (~0.8lbs or 360g each) broccoli , cut into 2 - 4 cups florets
  • ½ cup water
  • 6 cloves garlic , minced
  • 1 tablespoon peanut oil
  • 1 tablespoon Chinese rice wine (Optional)
  • ~tsp – ¼ tsp Fine Sea Salt or table salt to taste

Instructions 

  • Pressure Cook Broccoli: Pour in ½ cup of cold running tap water. Place a steamer rack into the pressure cooker. Place the broccoli florets onto the steamer rack. Lock the pressure cooker lid and pressure cook at Low Pressure for 0 minutes. Turn off the heat and do a quick release. Open the lid carefully.
  • Cool Broccoli: To stop the broccoli from cooking, quickly place the broccoli in an ice bath or place them under cold running tap water. Drain the water, set aside the broccoli to air dry.
  • *Optional Stir-fry Step: If you have a wok and don’t mind washing it, we recommend doing the Sauté Stir-fry the Garlic & Broccoli Step with a wok on the stovetop over HIGH heat. The flavor will increase by threefold (estimated :P).
  • Prepare Pressure Cooker: Remove the hot water and towel dry the inner pot. Heat up your pressure cooker (Instant Pot: press Sauté button and click the adjust button to go to Sauté More function). Make sure your pot is as hot as it can be when you place the garlic into the pot (Instant Pot users: wait until the indicator says HOT).
  • Sauté Garlic & Broccoli: Add 1 tablespoon of peanut oil into the pot. Ensure to coat the oil over the whole bottom of the pot. Add in the minced garlic, sauté the garlic for roughly 25 - 30 seconds. Do not let the garlic burn. Pour in the air dried broccoli and (optional) 1 tablespoon of rice wine and stir for 30 seconds. Season with fine sea salt to taste (We added ~ 1/6 teaspoon of salt). Stir it around for another 30 seconds. Done!
  • Serve and Enjoy: Serve the Pressure Cooker Broccoli with Garlic immediately with your favorite dishes!
