Instant Pot Italian Beef

  • Brown Chuck Roast Steak: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins) -you really want the Instant Pot to be as hot as it can be for the maillard reaction. 


    Pat dry the chuck roast steak and lightly season one side with salt + black pepper. Drizzle the inner pot with 1 tbsp olive oil. Then, place the seasoned side of the chuck roast steak in Instant Pot. Lightly season the other side with more salt + black pepper.

    *Pro Tip: brown each side for 10 minutes to develop some awesome deep flavors.
    *Note: If you prefer a "Dump-it-all-in" Recipe, you can skip the browning and saute steps.
  • Saute Onion and Herbs: Set browned chuck roast steak aside. If you want to serve the Italian Beef Sandwich with sauteed green bell pepper, saute then set them aside. 
    Add in sliced onions, saute until softened (~3 - 4 mins). Add in 1 tsp (1g) dried oregano, 1 tsp (1.2g) dried basil. If you prefer slightly spicy Italian Beef, add 1 tsp red pepper flakes. Saute for another minute.
  • Deglaze Instant Pot: Pour 1 cup unsalted stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon.
  • Pressure Cook Chuck Roast: Add in 1 tsp (3.5g) onion powder, 2 tsp (9g) garlic powder, 1 tbsp (15ml) soy sauce, 1 tbsp (15ml) fish sauce, and 1 tbsp (15ml) Worcestershire sauce. Give it a quick mix. 
    Place browned chuck roast steak back in Instant Pot and partially submerge it into the liquid as best as you can. Pressure Cook at High Pressure for 45 minutes + 25 minutes Natural Release.
  • Simmer Gravy & Shred Beef: Set aside chuck roast steak in a mixing bowl, then shred the meat with 2 forks. While you are shredding the meat, bring gravy back to a boil with the "Saute" function. 
    *Pro Tip: Reducing the gravy will naturally thicken it. If you find the gravy to be too oily, you can use a Fat Separator to filter out the fat.
  • Adjust Seasoning & Serve Instant Pot Italian Beef: Place the beef back in the yummy beefy gravy. Taste and adjust seasoning accordingly. Serve Italian Beef on Italian rolls. 
    Optional: Garnish with giardiniera and sauteed green bell pepper. Enjoy~ 🙂

Add 1 teaspoon red pepper flakes if you want it to be slightly spicy.

Brown Chuck Roast Steak


Heat up Instant Pot using Sauté More function.

*Tip: For older version, press “Saute” button, then “Adjust” button. For newer versions, press “Saute” button twice.

Saute Onion and Herbs


Set browned chuck roast steak aside.

If you want to serve the Instant Pot Italian Beef Sandwich with sauteed green bell pepper, now is a good time to saute them, then set them aside.

Add in the sliced onions, then saute until softened. It takes roughly 3 – 4 minutes.

With Venting Knob at Venting Position, close the lid and turn Venting Knob to Sealing Position.

  • Pressure Cooking Method: Pressure Cook at High Pressure for 45 minutes + 25 minutes Natural Release.

After 25 minutes, release remaining pressure by turning Venting Knob to Venting Position. When Floating Valve drops, open the lid carefully.

Simmer Gravy & Shred Beef


Set aside chuck roast steak in a mixing bowl, then shred the meat with 2 forks. It should be “fork tender” 🙂

While you are shredding the meat, bring gravy back to a boil with the “Saute” function.

I made this for dinner, and it was so good and easy. I followed the recipe’s advice, and let the chuck roast brown for about ten minutes on each side, and I could tell the difference from the depth of flavor. Hubby, who is not the easiest to please, loved it, and it’s going on my make again list.

Wow!!! Since getting my InstantPot about 18 months ago, your website has become my go to source for amazing recipes. I have tried many (Japanese Beef Curry, Cheescake, etc….) and they have ALL been big hits with my whole family. We tried this one about two weeks ago and my daughter, who turns 14 tomorrow, just asked for this again for her birthday dinner!!!! Definitely a winner and frequent do over in our home! I’ve been looking for a recipe for Italian Beef Sandwiches like I had many years ago in Chicago. These weren’t what I was looking for, but we enjoyed them. Next time I’ll add more of the herbs and more broth so there will be more gravy for the sandwiches. Thanks for the recipe.

I just made this and it turned out a bit salty but overall, taste is awesome and meat is great.
So my concern here is; ingredients says 1-3lbs of meat for the stated seasoning. Mine turned out salty because i doubled all my seasonings. What if i only cook a 1lb meat with the stated seasoning rather than a 3lb, my sauce would turn out salty as well. Im always confused on the quantities of seasoning for 1-3lbs of meat for quite a few recipes already.
